So I have transformed into the ultimate Martha Stewart... I'm sewing buttons, looking through cookbooks, and in my spare time dabbing in interior design!
But these recipes have been a hit in the Kiser home and now you just might want to try them in yours...
Chicken Enchiladas
1 4-ounce can of diced green chile peppers
1 3-ounce package of softened cream cheese
1 tablespoon of milk
1/4 teaspoon of ground cumin
2 cups of chopped cooked chicken
flour tortillas
1 can of enchilada sauce
Combine cream cheese, milk and cumin. Add 1 tablespoon of green chile peppers. Add chicken, mix. Put mixture into flour tortillas, place seam down in a greased 3-quart baking dish. Pour left over chile peppers and enchilada sauce evenly over tortillas. Cover with foil, bake for 35 minutes at 350.
Creamy Potluck Potatoes
3 pounds of peeled cut up potatoes
1 10 3/4 ounce can of condensed cream of chicken soup
1/2 cup dairy sour cream
1 3 ounce paskage of cream cheese, softened
2 tablespoons butter, melted
3/4 cup of shredded cheddar cheese
1/4 cup of milk
1/4 teaspoon of garlic salt
1/4 teaspoon of black pepper
Cook potatoes, covered, in boiling salted water for 10 minutes. Drain. In a large bowl stir together soup, sour cream, cream cheese, butter. Stir in 1/4 cup of cheddar cheese, milk, garlic salt, and pepper. Mix in potatoes. Put in 2-quart baking dish. Bake 350 for 25 to 30 minutes. Sprinkle left over cheese and let stand until cheese melts.
